
I often search for new ideas for baking on Youtube. Mostly I watch videos with ingredients that I have to hand, or that show recipes I can change just a little to use what I have. I bake the original recipe one time, then after that I will change it as I like. (But because I don't use cow's milk, I always change the milk to soy milk.)
One channel I like is artisanbreadwithstev a gentleman from the USA who bakes all kinds of easy to make and handle breads. Recently I tried his No-Knead Multigrain Whole Wheat Bread… super easy… recipe and it turned out really well! I made several small differences such as the type of yeast (and therefore the amount) that I used, and I doubled the amount of sesame seeds and didn't add flax seeds. One more difference is that I put the dough in the refrigerator overnight as it is now too warm in Okinawa to leave it on the countertop as he suggested. Oh, and I put a lot of sesame seeds in the bottom of the pan before I added in the dough.
I used 6grams of Shirakami natural yeast so the taste was much more flavorful than if I'd used regular instant yeast.
