We usually eat our main meal at lunchtime for several reasons. First, personally it is better for my health that way, and second, I work at night so I don't have much time to prepare, cook and clean up.
That means a lot of our dinners are really easy and fast. 'fast food' if you'd like to call it that. Mostly I just eat vegetables, salad and a kind of protein. For example, some tofu or natto (fermented soy beans). My husband will eat a more traditional meal.
This is something I cooked recently:
- slice up onions and sauté them just a little (they still should be white)
- add some kind of mushroom into the pan (a white type is best)
- add some herbs (this time I used chives)
- heat some readymade udon noodles (the chewy type), drain the noodles
- toss the noodles in the pan and season them as you like (just a dash of soy sauce is nice)
- eat!
This meal was even more delicious as the onions were fresh out of my garden!
P.S. If you make more of the onions and mushrooms than you need, you can keep them for the next day to add to another dish or to put on top of toast, etc.
